One slot drum can feed 5-6 people with this recipe. It's been a hit every time I've made it for folks.

Hatteras Style Drum.

1.Cut the drum into cubes and boil. Yes, boil.
2.Boil potatoes.
3.Cut slat pork into cubes and fry until nice and crispy.
4.Reserve the grease. Yes, the grease.
5.Chops onions.

Put the potatoes on your plate and “smoosh” them. Add the Drum & Top with the fried salt pork and raw onions. Slather with the hot grease.
